2 small kohlrabi green or purple variety, peeled and cut into matchsticks about 1/8" to 1/4" wide
1 large Honeycrisp, Fuji or apple of your choice), cored and cut into matchsticks about 1/8" to 1/4" wide
3 leaves of Lemon Verbena, minced - this is an easy to grow herb! If you don't have that herb, mint and thai basil are really nice as well, in fact, I often add all three!
1 tablespoon of white aged Balsamic vinegar, seasoned rice vinegar or regular balsamic
Directions
In a medium sized serving bowl, combine apple and Kohlrabi matchsticks and minced herbs.
Drizzle in the white Balsamic vinegar and mix well. Chill for an hour and serve.
Notes
Kohlrabi is very high in vitamin C and full of fiber!
