Clean Dandelion ahead of time. Dandelion can be very sandy, so clean well.
Here's a BIG tip:
Fill sink with water, cut off dandelion root and discard or compost. Put leaves in sink with water swish around till dirt falls off then place on a dry towel, or put into salad spinner to dry.
* If super dirty, it may need another washing. I have a twin sink, so I fill one sink with lukewarm water and the other with cold water. I place the dandelion into the lukewarm water sink first then into the cold water sink for extra measure. Works like a charm!

4 - 5 cups of cleaned, chopped to 1/2" - 1" dandelion greens
2 hard boiled eggs, cut up in small pieces
1/8 cup sweet onion chopped
2 tbls extra virgin olive oil, or other healthy oil like macadamia nut or avocado oil
1 - 2 tbls high quality, aged balsamic vinegar
1/2 tbls seasoned rice vinegar (optional)
salt, garlic powder to taste
Place greens, eggs, onions and seasonings in a large bowl. Add oil and vinegars and mix well and serve.
Enjoy as a main dish or as a side.
