2 raw eggs, each scrambled in bowl
1/4 of a chopped onion or ½ of a shallot
4 shiitake mushrooms, sliced in ½“ pieces
1-2 cups spinach, chopped or baby spinach leaves
1-2 tbls salsa of choice
1 large sized bell pepper, halved and seeded
Salt to taste
Optional: Shredded cheese of your choice
Sauté the onion and mushrooms in 1tbls of olive oil until soft. Add spinach and cook until wilted. Add salsa and mix until warmed. Distribute mixture evenly into pepper halves. Add ½ scrambled egg to each one. Bake in oven at 375 for 30 to 35 mins. or until eggs are set.
Option: Top with Shredded Cheese before baking.
Eggs in a bell pepper, who would have thought? This is delicious. You can garnish it with a little cheese of your choice or sliced avocado. This is called Breakfast Stuffed Bell Peppers, mostly because of the eggs, but you can eat this for lunch or dinner if you prefer.
This is a 1-2 person recipe, but you can make more - just double or triple the amounts!
