Bone Broth - Chicken
Save organic, pastured roasting chicken carcass and freeze until you are ready to make broth.
Save the ends of vegetables or stems from greens or tops of carrots and beets and freeze until ready to make broth.

Chicken necks and feet and/or carcass from a roasting chicken
Water to cover
3 tbsp apple cider vinegar
Sea Salt and Ground Black Pepper
2 Bay Leaves
Garlic cloves
Vegetables of choice
Place all ingredients into slow cooker or stock pot and add enough water until chicken is submerged.
Turn setting to high until it boils, then turn to low and simmer for 24 hours.
Use a slotted spoon to remove veggies and bones. Strain the broth through a find mesh strainer, into a glass dish or mason jars. Add the veggies to the strainer to squish out all of the juice.
Let cool on the counter before putting on lids and transferring to the fridge. After cooling, scrape the fat from the top of jars (though you may choose to keep this, as it has value). Freeze if you aren't going to drink within 3-4 days.
