Clean Dandelion ahead of time. Dandelion can be very sandy, so clean well.
3 to 4 cups of cleaned, chopped to 1/2" dandelion greens
2 hard boiled eggs, cut up in 1/2" pieces
1/4 cup sweet onion chopped
1 1/2 tbls extra virgin olive oil
1 tbls high quality, aged balsamic vinegar
1/2 tbls seasoned rice vinegar (sweet)
salt, garlic powder to taste
Place greens, eggs, onions and seasonings in a large bowl. Add oil and vinegars and mix well and serve.
Enjoy as a main dish or as a side.
