Avocado Toast Two Ways

How to ripen an avocado:

The easiest way to ripen an avocado is to place it on your counter or in your fruit bowl for a few days until it gives slightly to gentle squeezing in the palm of your hand.  The color will turn from green to deep green/ black.

Ingredients

1 slice of bread (try thick, crusty artisan breads, sourdough, rye, wheat, multigrain, gluten-free or whatever bread you prefer)

1/2 ripe, fresh ripe Avocado, peeled, seeded and mashed

egg

slices heirloom or beefsteak tomato

Fresh cracked pepper to taste

Sea salt to taste

Directions

Avocado Toast with Poached  or Fried Egg

  1. Toast 1 slice bread and spread with 1/2 ripe, fresh avocado (mashed or sliced).
  2. Poach or fry one egg as desired.
  3. Place cooked egg onto avocado toast, sprinkle with salt and pepper if desired.

Avocado Toast with Heirloom Tomatoes

  1. Toast 1 slice bread, spread with 1/2 ripe, fresh avocado (mashed or sliced) and 1-2 slices heirloom or beefsteak tomato.
  2. Top with fresh cracked pepper and sea salt to taste.

Notes

Avocado toast is technically just sliced or smashed avocado on top of a piece of toast, so simple - but when you take one bite you will quickly realize that it is so much more than that.
